Chicken & Drop Dumplings by Shawn Moxley, Cappyccino’s
It all begins with an idea.
Serves: 6-8

Cook time: 30 - 40 min
SOUP INGREDIENTS:
* 1 tablespoon olive oil
* 1 cup chopped onion (about 1 medium)
* 1 cup chopped carrots (about 2 medium)
* 1 cup chopped celery (about 2 stalks)
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1/4 teaspoon dried thyme
* 2 cloves garlic, minced
* 8 cups chicken broth (homemade or store-bought)
* 1 cup cooked chicken, shredded (about 2 cups, I like to use chicken thighs)
* 1/2 cup heavy cream
* 1 tablespoon butter, softened
* 1 tablespoon all-purpose flour
DUMPLINGS INGREDIENTS:
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1 cup milk
* 1/4 cup melted butter
